Irish Soda Bread Muffins

Slainte is Tainte!

A PERFECT WAY TO START YOUR ST. PATRICK’S DAY.

2 ¼ CUPS FLOUR½ CUP SUGAR
½ TSP SALT1 TSP CARAWAY SEEDS
2 TSP BAKING POWDER¼ TSP BAKING SODA
1 EGG¼ CUP VEGETBLE OIL

EXTRA SUGAR – for dusting the tops
1 CUP BUTTERMILK¾ CUP DRIED CURRANTS

¼ CUP BUTTER – melted

Preheat oven to 400º.  Butter 12 muffin cups or use paper liners.

Place the flour, sugar, salt, caraway seeds, baking powder and baking soda into a large bowl. Using a whisk, stir all the ingredients until they are well combined. In a separate medium bowl place the egg, buttermilk and oil. Whisk all together until they are all joined together.  Pour the liquid into the dry mixture and stir using a spatula or wooden spoon until the mixture has just started to come together. A few lumps may remain and that is ok – don’t over mix.

Lastly, gently fold the melted butter into the batter and stir until there are no traces of any butter to be seen.  Finish by folding in the currants and then let the batter rest for about 30 minutes or up to an hour in the refrigerator.

Fill each muffin cup ¾ of the way up.  Sprinkle a little sugar on top of each muffin.

Bake for 15 minutes.  Let cool for 5 minutes before transferring to a wire rack to cool completely. 

NOTE: Add a drop of green food coloring and you are all set to start your celebration!

These are delicious served warm with butter or honey.
