Passover Greetings and Original Vegetable Cutlet

ORIGINAL VEGETABLE CUTLET

This recipe is from a long-gone kosher dairy restaurant in New York City. It gives a meat like experience without violating Jewish dietary laws.

Cutlets:
1 lb Carrots – peeled, grated
1 Head Cauliflower – cut into small florets
1 pkg (10 oz) Green Peas – frozen
2 Eggs
1/2 C. Breadcrumbs – dried
1 tsp Kosher Salt
1/2 lb Turnips – peeled, grated
1 medium Onion – grated
2 Garlic Cloves – minced
1/2 lb Green Beans – trimmed, cut
1 C. Matzoh Meal
Freshly Ground Black Pepper
3 Tbs Vegetable Bouillon – powder, concentrate dissolved in 1 C. water

Preheat oven to 350º

Lightly grease a baking sheet.

Combine all the cutlet ingredients in a large bowl and mix well using your hands. The beans should be cut into bite size pieces with the ends trimmed. Form the mixture into 8 1-inch thick patties and place them 1 inch apart on the prepared baking sheet. Bake in preheated oven for about 1 hour until lightly browned and heated through.

While this is in the oven make the gravy.

GRAVY:
2 Tbs. Butter
2 lbs White Mushrooms – thinly sliced
1/4 tsp Freshly Ground Black Pepper
1 Med. Onion – minced
3 Tbs. Vegetable Bouillon – powder, dissolved in 4 C. Water
2 Tsp. Arrowroot – dissolved in 1/4 C. cold water

Warm the butter in a large skillet over medium heat.  Add the onion and cook until a deep gold in color – about 4 or 5 minutes. Add the mushrooms, partially cover, and cook stirring occasionally until the mushrooms are soft – about 8 or 10 minutes. Add the dissolved bouillon mixture along with the pepper and stir well. Simmer all until reduced by half – about 20 to 30 minutes.

Remove from the heat and whisk in the arrowroot. Return to a very low heat and cook until thickened about 3-5 minutes. Do not allow to boil. Serve the cutlets with the gravy.
