POPPY SEED CAKE

Simply delicious

1 Cup Butter – softened
1 ½ Cups Sugar 
4 Eggs – separated 
1/2 Pint Sour Cream
1 Tsp. Baking Soda 
2 Cups Flour 
3 Tsps. Vanilla
¼ Cup Poppy Seeds  

Cream butter and sugar.  Add 4 egg yolks, 1 at a time, constantly beating.  Add

sour cream, baking soda, flour, poppy seeds.  Fold in 4 well-beaten egg whites.

Bake in a slightly greased Bundt pan for 50 – 60 minutes.  Cool for only a few

minutes.  Turn out onto a cake plate and dust with powdered sugar.  Dust again

with powdered sugar just before serving.

NOTE: Instead of vanilla if you substitute freshly squeezed lemon juice you have another delicious cake. Chopped walnuts or pecans are a good addition too.
