ARUGULA SALAD WITH GRILLED                                                                                PEACHES AND FETA

2-3 FIRM RIPE PEACES – quartered, peeled or unpeeled
10 oz BABY ARUGULA – rinsed and shaken dry
1 CUP FETA CHEESE – crumbled
¾ CUP FRESH MINT LEAVES – torn 
¾ CUP TOASTED PISTACIOS – roughly chopped
½ CUP EXTRA VIRGIN OLIVE OIL
2 TBS WHITE WINE VINEGAR
1 TB LEMON JUICE – freshly squeezed
1 TSP DIJON MUSTARD – or to taste

Place peaches, cut side down, on an oiled grill, uncovered until charred to your taste, turning to grill on all sides.

Toss together, arugula, feta, mint, pistachios in a large bowl.

Whisk together, olive oil, vinegar, lemon juice, mustard, honey, salt pistachios, feta and pepper in a bowl until well combined.  Drizzle vinaigrette over arugula and toss to combine. Serve grilled peaches over the salad.

NOTE: You can change out the pistachios with pecans or even walnuts.
