2 lbs. Fava Beans – removed from pods
2 Garlic Cloves – sliced
3 tsp. Olive Oil
Salt and Freshly Ground Pepper
3 oz. Pecorino Cheese – crumbled
1 Tbsp. Red Wine Vinegar
1 Tbsp. Fresh Basil – torn
Remove the beans from the pods and put them in a pot of water in which they are covered by 2 inches and add some salt. Bring to a boil and let boil for one minute. Remove the pot from the heat and let the beans soak in the water until they are cool. Drain and put into a bowl. Add the pecorino, garlic, vinegar, olive oil, basil, salt and pepper. Give it a good toss and let sit for a few minutes before serving.
Note: This is a traditional dish to serve when celebrating the Feast of St. Joseph on March 19th.
Also, many Italian men will have one or two of these in their pocket. One for good luck (Buona Fortuna) and one to give away.
