PEACH MELBA
| 3 CUPS WATER | 3 ½ CUPS SUGAR |
| SEEDS – 1 VANILLA BEAN | 3 TB FRESH LEMON JUICE |
| 6 RIPE PEACHES | 1 PINT RASPBERRIES |
| ½ CUP POWDERED SUGAR VANILLA ICE CREAM – good quality | 1 TB FRESH LEMON JUICE |
Place water, sugar, vanilla seed and lemon juice in a large saucepan over medium heat. Let sugar gently dissolve and then raise heat and bring all to a boil. Let boil for 5 minutes and then reduce to simmer.
Cut peaches in half and remove pit. Poach the peach halves in the sugar water for 3 minutes on each side. Remove to a dish with a slotted spoon and remove skin.
Once peaches are cool pour sugar syrup over them and refrigerate.
Using a blender or small processor, place berries, powdered sugar and lemon juice in and process until thoroughly emulsified. Pour sauce through strainer to remove seeds and pour into a small bowl.
Place 2 peach halves on each plate over a good scoop of ice cream and drizzle raspberry sauce over all allowing it to puddle onto plate.
