THAI BEEF CURRY

INGREDIENTS:

OLIVE OIL – for pan

1 POUND CHUCK STEAK

2 RED BELL PEPPERS – seeded and thinly sliced

1 ½ CUP GREEN BEANS

1 LARGE ONION – sliced

1 TBS GINGER, – grated

1 CAN COCONUT MILK

1 TBS LEMONGRASS, – CHOPPED

1 TSP SALT – or to taste

1 TSP BLACK PEPPER – or to taste

2 TSPS CURRY POWDER – or to taste

CASHEWS OR SLICED ALMONDS – optional

RICE FOR SERVING

PREPARATION

 Slice steak against grain into ½” wide strips.

 Heat 3 tablespoons olive oil in large cast iron skillet over medium-high heat. Add

steak, onion, and bell pepper, and sauté for 2 minutes.

 Reduce heat to medium. Add remaining ingredients, cover and cook for 25

minutes. Stir a few times during the cooking process. Add nuts if using.

NOTE: Best enjoyed served over cooked  Sushi rice or rice of your choice!
