The easiest cobbler to make.
PREHEAT OVEN TO 350º
9X12-INCH BAKING DISH LIGHTLY GREASED
2 CUPS PIONEER BISCUIT MIX
2 CUPS SUGAR
2 CUPS WHOLE MILK – I use a little ½ and ½ in the mix
2 EGGS – lightly beaten
¼ CUP BUTTER – melted, cooled
1 21 OZ CAN APPLE FRUIT FILLING
PINCH NUTMEG – optional
½ TSP CINNAMON – or more to taste
ADDITIONAL SUGAR – for dusting
Combine biscuit mix and sugar in a large bowl. Add milk and eggs and mix well making sure all is incorporated. Pour batter into the prepared dish. Slowly and evenly pour the melted butter over the entire surface. Spoon the pie filling on top and sprinkle with the cinnamon sugar.
Bake 50-60 minutes until brown on top. When still warm sprinkle with an additional mixture of sugar and cinnamon or simply additional sugar. Serve warm.
Note: This makes a great dessert served with ice cream or whipped cream. It also is a great brunch cobbler. You can use any fruit filling in this recipe and I have also made it with peach and apricot.
