ONION PIE

(This is one of my go to recipes when I need an appetizer quick and easy)

PREHEAT OVEN TO 350º

Smear 6 tablespoons of softened butter all over a 10-inch pie plate.

Crush one full sleeve plus about 8 crackers more by pounding in a plastic bag  with your rolling pin or just put in the Cuisinart for a few spins. Pour these into the buttered dish and press hard to make a fairly firm crust.

Fry 2 cups of thinly sliced onions in 2 tablespoons of butter for about 3-5 minutes, until soft.  Take off heat and mix in 1 ½ cups Swiss cheese (actually you can use any cheese you like but this seems to work best), 2 eggs beaten until frothy, 1 cup milk and salt and pepper, to taste.

Carefully pour all this into the pie shell and bake for 1 hour or until the top is golden brown.  Let sit for 5 minutes before serving.

PS: over the years I’ve made this even quicker by first putting the crackers in the Cuisinart and spinning a few times and then pressing firmly in the prepared baking dish which I like to chill while cooking the onions. When ready, with just a quick wipe of the bowl, I add the quartered onions and spin just until coarsely chopped. So easy! 

You will wish you made two when you see how fast this disappears.!
