On this day, June 6th, we celebrate the 80th Anniversary of D-Day. This operation brought together the land, air, and sea forces of the allied armies in what became known as the largest amphibious invasion in military history. The operation, given the codename OVERLORD, delivered five naval assault divisions to the beaches of Normandy, France.

D-Day is a term used by the Armed Forces to refer to the beginning of an operation. The ‘D’ stands for Day meaning it’s actually a short version for ‘Day-Day’ (which is nowhere near as catchy).

A total of 4,414 Allied troops were killed on D-Day itself, which included 2501 Americans. More than 5,000 were wounded. In the ensuing Battle of Normandy, 73,000 Allied forces were killed and 153,000 wounded.

PASTA WITH FRESH TOMATOES, GARLIC AND MOZZARELLA

When tomatoes are ripe and juicy you can’t beat this for an easy meal.

1 Lb Short Pasta – your favorite
1 Large Tomato – very ripe
2 Cloves Garlic – sliced
¼ Cup Extra Virgin Olive Oil
7 – 8 Fresh Basil Leaves – torn
1 Small Onion – minced
1 Cup Fresh Mozzarella – shredded
Salt and Pepper – to taste

In a bowl, add the olive oil, garlic, basil and onion. Chop the tomato or just cut into strips and add to the mixture. Then add the basil and stir. Add a little salt and pepper, stir and cover. Let the mixture marinate for several hours out of the fridge. When ready, boil the pasta, al dente. Drain well and add to the tomato mixture. Quickly add the shredded mozzarella and stir well so that all the cheese melts. Serve immediately.

Note: The mozzarella melts and gets nice and string. This is a family favorite and so easy. It is always on our beach menu.
