Nutella Breakfast Muffins

It’s our first day back from our family beach vacation so I knew to plan ahead for something good for breakfast to take my mind off the magical fun it was to be with all the family, especially the grandkids because with work, school, college and distance we might not see some of them until Christmas and even with phone calls and Face Time that’s a long ways away!

Nutella Breakfast Muffins

 Soft and tender homemade muffins with a delicious swirl of luscious Nutella                             and what could be better for breakfast or coffee snack!

PREP TIME –10 minutes

COOK TIME – 20 minutes

TOTAL TIME – 30 minutes

PREHEAT OVEN TO 375º

GREASE 12 MUFFIN CUPS or USE LINERS

Ingredients

1 1/2 cups all-purpose flour

3/4 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup vegetable oil

1 egg

½ teaspoon vanilla

1/3 cup milk

1 cup Nutella

Directions

Combine flour, sugar, salt and baking powder. 

Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to equal 1 cup, add vanilla. Pour into flour mixture and stir until just combined.

Divide batter among the muffin cups and spoon about 1 tablespoon of Nutella on top. Using a toothpick, knife, or skewer swirl the Nutella into the batter.

Bake for 14-18 minutes or until a tester comes out clean.

Remove muffins from the oven and let cool for 5 minutes before removing to a wire rack to cool completely.
