Looks like a cake but really a delicious
bread filled with onions to serve with
dinner or as an appetizer.
PREHEAT OEN TO 350º
BUTTER A 10-INCH SPRINGFORM PAN
4 ONIONS – halved and sliced very thin
or coarsely chopped
2 CUPS BUTTER – cold, divided
1 ½ TBS SALT – or to taste
1 TSP PAPRKA– or more to taste
FRESHLY GROUND PEPPER – to taste
4 CUPS FLOUR
½ CUP CORNSTARCH
1 TB SUGAR
1 TB BROWN SUGAR
1/3 CUP MILK – whole
5 EGGS – room temperature, lightly beaten
¾ CUP SOUR CREAM – drained
Melt ½ cup butter in a large heavy bottom skillet, add onions and cook over low heat for about 10-12 minutes. Stir in the salt, paprika and pepper and continue cooking until the onions are golden while stirring often. When golden remove from the heat and set aside.
In a large bowl, combine flour, cornstarch, baking powder and sugars. Cut in the 1¼ cups butter until the mixture resembles coarse crumbs. Melt the remaining butter in a separate dish. In a small bowl stir in the eggs, milk, sour cream and melted butter. Make a little well in the dry ingredients, stir in the egg mixture just until moistened. Spread batter evenly in the prepared springform pan.
Pour onion mixture carefully over the batter and place pan on baking sheet and bake for 35-40 minutes or until a tester inserted in the center comes out clean.
NOTE: This makes a complete and easy meal when served with soup or a salad. Also great with stew or enjoy as an appetizer. Add a few red pepper flakes or a little Cajun seasoning for a completely different taste. Best served warm!
