PREHEAT OVEN TO 350º
9-INCH PIE PAN – sprayed with baker’s spray
2/3 CUP WHOLE MILK
6 TBS BUTTER – unsalted, divided
2 ¼ CUPS FLOUR – all purpose, divided
2 ½ TSP BAKING POWDER
4 TBS SUGAR
¼ TSP SALT
½ CUP LIGHT BROWN SUGAR
2 ½ TSP CINNAMON
Using a medium sized measuring cup with a pouring spout, add the milk and 4 Tbs of the unsalted butter and heat in the microwave on high until the butter has melted and the milk is warm but not or near the boiling point. Stir well and set aside.
In a large mixing bowl add 2 cups of flour, baking powder, sugar and salt. Stir all to combine.
Slowly pour the warm milk into the flour mixture while gently tiring the dough together with the use of a spatula until all the milk is absorbed into the flour. With lightly floured hands, knead the dough, inside the mixing bowl, to form a small ball. Cover th bowl with a damp towel and allow to rest for 10 minutes while you prepare the cinnamon filling.
In a small bowl stir together the light brown sugar and cinnamon. In a small dish melt the remaining 2 tablespoons of unsalted butter and set aside.
On your counter or pastry board, add the remaining ¼ cup of flour and spread it out in an area large enough to roll out your dough in. Using a lightly floured rolling pin, roll the dough out into a 10X12-inch rectangle.
Using a pastry brush, brush the 2 Tbs of milted butter onto the entire surface and sprinkle over all and evenly the sugar-cinnamon mixture.
Roll the dough from the long edge into a log. Slightly cut off each end t o make even and slice the log evenly into 12 rolls that are each about an inch wide.
Gently place each roll into the prepared dish and bake for 25 – 30 minutes or until the rolls are just a light golden brown on the edges. DO NOT OVERBAKE!
CREAM CHEESE ICING
2 OZ CREAM CHEESE – whole milk, room temperature
2 TBS BUTTER – unsalted, softened to room temperature
PINCH OF SALT
2 TBS MILK -whole, not low-fat or skim
1 CUP POWDERED SUGAR – sifted, ore as needed
In a medium-sized mixing bowl, using a hand-held mixer on medium speed, cream together the cream cheese, unsalted butter and salt for a minute or two just until there are no lumps and everything is well combined.
Add the vanilla extract and whole milk to the mixture and beat for 30-45 seconds or just until everything is completely incorporated.
On low speed slowly add in the powdered sugar and beat until creamy and smooth. Add and additional 1 or 2 teaspoons of milk slowly if the mixture is too thick to spread nicely.
Once your cinnamon rolls have come out of the oven and while they are still warm but not too hot, spread some frosting on each roll and then allow to cool a bit before servimg.
