POTATO SOUP DUMPLINGS RECIPE

Makes many a simple soup more exciting!

INGREDIENTS:

1 large potato – peeled and grated

1 cup all-purpose flour

1 cup whole milk

Salt & pepper – to taste

DIRECTIONS:

Bring a large saucepan of salted water to a boil.

DUMPLING DOUGH:

In a medium bowl, combine the grated potato, flour, whole milk, salt, and pepper. Mix until a thick paste forms.

FORM AND COOK THE DUMPLINGS:

Dip a teaspoon in the boiling water, then use it to scoop up about half a teaspoon of the dumpling mixture.

Slide the mixture into the gently boiling water.

Repeat this process until all the dumpling dough is used up. Let the dumplings simmer for about 20 minutes, or until they taste done. Drain the dumplings in a colander and serve as a side dish or use them in a soup or stew.

NOTES:

This recipe makes enough drop potato dumplings for about 8 servings of soup.

For a different presentation, you can roll some of the dough between two spoons before dropping them into the broth. The taste will remain the same either way!
