Easy and Delicious
2 Slices Flank Steak – pounded thin
2 Garlic Cloves – minced or mashed
1 tsp. Raisins – chopped
Salt and Freshly Ground Black Pepper
1/2 C. Chopped Onions
1 tsp. Fresh Parsley – chopped
1 Tbsp. Pine Nuts
1 tsp. Grated Cheese – your favorite
4 Tbsp. EVOO
1/4 C. White Wine – your favorite to drink
3 C. San Marzano Tomatoes – pureed in blender
A few Basil Leaves – torn
Pound the steak until they are thin enough to roll. Spread the parsley, garlic, pine nuts, raisins, grated cheese, salt and pepper evenly onto the steaks. Roll up the meat and then tie each one with string making sure to secure the ends so that the stuffing does not fall out while cooking.
In a pan large enough to hold the braciola, brown the onions in the olive oil until soft. Then add the meat browning all over. When browned, add the wine and cook until the aroma is gone. Add the tomatoes and basil and cook slowly on low heat for at least two hours while occasionally spooning sauce over.
Note: this is a good stand-alone dish with a salad. I usually make several Braciole and put them in the sauce with my meatballs, etc. My Nonna, Giovanna, who ran the Pensione/Restaurant sometimes made these with pig skins and they were so delicious. I’m fairly certain that my Mother-in law, did the same.

BROCCOLI WITH ANCHOVIES
4 Large Heads of Broccoli
8-10 Garlic Cloves – minced
¾ tsp. Red Pepper Flakes – or to taste
1 C. EVOO
16 Anchovy Fillets – rinsed, minced
Cut off the broccoli florets leaving 1-inch-long stems. Peel stalks and cut into 1-inch-long pieces. In a large pit of salted boiling water cook the stalks for about 3 minutes. Add the florets and cook for another 3 minutes. Drain and refresh in a bowl of cold water. Drain well, pat dry and set aside.
Heat oil in a heavy bottom and very large, deep skillet over low heat. Add garlic and cook until golden brown, stirring occasionally, about 2 minutes. Do not let it burn. Add anchovies and some red pepper flakes, mashing all together with a wooden spoon. Add broccoli and toss well until all is heated through. Taste and season with salt and freshly ground black pepper. Transfer to a bowl, sprinkle with a few more red pepper flakes, if desired. Serve warm or at room temperature.
