INGREDIENTS
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or substitute with regular milk + 1 tsp lemon juice/vinegar)
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup chopped pecans
Feel free to add a pinch of cinnamon or nutmeg for a festive twist!
INSTRUCTIONS
STEP1: PREHEAT THE OVEN
Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
STEP2: MIX THE WET INGREDIENTS
In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until smooth. Beat in the eggs one at a time, followed by the vanilla extract. Add the buttermilk, ensuring a silky consistency.
STEP3: COMBINE THE DRY INGREDIENTS
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture. Avoid overmixing for a soft, tender crumb.
STEP4: ADD PECANS
Gently fold the chopped pecans into the batter, ensuring they are evenly distributed.
STEP5: BAKE
Pour the batter into the prepared pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool for 10 minutes in the pan before transferring it to a wire rack.
NOTES
- Use fresh pecans for the best flavor.
- For extra crunch, toast the pecans lightly before adding them.
- Add a pinch of cinnamon or nutmeg for a spicy twist.
